Veldhuis Family Chicken Cordon Bleu

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 eggs
  • 1 cup flour
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups Italian-style breadcrumbs
  • 4 slices ham
  • 4 slices Borden® Sun-Dried Tomato Basil Singles Sensations®
  • 2 tablespoons olive oil

Directions

Pound each chicken breast to 1/3-inch thickness, and set aside. Sift together flour, salt and pepper in bowl. In a separate bowl, beat eggs. Place breadcrumbs in a third bowl. Dredge each chicken breast in flour, then beaten egg and finally breadcrumbs. In thick-bottomed, ovenproof skillet, heat olive oil; sear chicken to golden brown on both sides. Turn off heat; carefully top each chicken breast with one slice of ham and then one slice of Sun-Dried Tomato Basil Singles Sensations®. Bake at 350° for 10-12 minutes, or until chicken is cooked through.
